Italian Beef Stew
Please answer: Did it feed 4 adults? How did it taste and would you like this again?
2-3 carrots
3-4 ribs celery
1-1 1/2 cubs of chopped onions
14 1/2 oz can stewed dices tomatoes
1 1/2 tsp salt
1/4 tsp pepper
1/4 tsp worcestershire
1/2 tsp italian seasoning
Thickening the sauce: 2-3 Tbsp of corn starch
The serving size is 5-6 adults. So I've reduces the amount of meet that goes into the stew to feed 4 adults.
Try sauce, if too salty add some water until its just right for you and your family. When almost done, take some liquid out of stew (maybe 1/4cup) ...let it cool down to room temp then mix the corn starch with it. Add this mixture to the stew. If you don't want to use the stew sauce, you can use water. Once the sauce thickens, you can eat.

Taco Soup
Please comment on this: Did it feed 4 adults? How did it taste and would you like it again?
1 pound lean ground beef
1 (10 ounce) cans diced tomatoes
1 (15 ounce) can kidney beans,
1 (10 ounce) can black beans
1 (10 ounce) can whole kernel corn
1/2 (1.25 ounce) package taco seasoning mix
1 to 1 1/2 cups water- depends on taste
Preparation:
Put everything in the pot including all the juices from the cans and let it boil. Make sure to stir once in a while. Once it boils, turn off heat. Ready to serve. Don't over cook, because the beans won't taste as good.
Serve with shredded cheese and corn chips.

Meal change
After doing a test run of the "Caesar Spaghetti", we decided it wasn't that good.
So, I'm changing my meal, hopefully for the better!
Frito Chili Pie
(I combined a few different versions of this recipe)
Make Chili mixture:
1 can pinto beans
1 can chili
1 can diced tomatoes with green chilies
1/2 pound ground beef (cooked and drained)
Crush 2 cups corn chips and place on the bottom of a lightly greased baking pan. Place chili mixture on chips. Top with 1 1/2 cups shredded cheese. Bake in a 350 degree oven for 15-20 minutes.
I'm freezing the cheese and chili mixture, and providing a bag of chips.
To prepare from frozen, thaw the chili and cheese, and follow the above directions. If you don't want to heat up your oven (and house!) you can always just heat it up on the stove, and pour over the chips. You can also add lettuce to this and eat it like more of a taco salad. Many recipes called for onions, which I didn't add, but obviously there are many other toppings you could throw in as well, depending on what your family likes.
Hopefully this is an enjoyable meal :)

LOAF
I don't really like that word 'loaf', but this is pretty good. I can take out the onions for the non-onion peeps, but I think onions contribute to the overall flavor. I plan to use ground turkey, for health and we like it better. Sorry to make you turn your oven on, but if you thaw it... should only take 30- 1 hour max to bake.
Bacon Swiss Meatloaf

In bowl combine egg, crackers, 4 Tablespoons shredded cheese, chopped onion, garlic, bacon, salt and pepper. Add beef into mixture and combine. Shape into loaf and freeze wrapped in tin foil or in a ziploc bag. When ready to cook take out of the freezer and place in a loaf pan. Top with more bacon pieces if desired. Bake at 350 degrees for 30 minutes- 1 hour.

Pauline's style of beef and broccoli
Did this meal feed 4 adults? How did it taste and would you like this repeated?
Ingredients:
½ lb. of beef flank ¾ lb broccoli (or however much you want
½ tbsp soy sauce
1 tbsp sesame oil
2 tbsp cornstarch
1 tbsp oyster sauce
1 tbsp vegetable oil
½ cup water
½ tsp sugar
Marinade the beef:
½ tbsp soy sauce
½ tbsp sesame oil
1 tbsp cornstarch
Sauce:
½ cup water
1 tbsp oyster sauce
½ tbsp sesame oil
½ tsp sugar
1 tbsp cornstarch
Cooking Directions
Cut the beef into thin, bit-size pieces and mix in the marinade. Marinade the beef for at least ½ hour for good favor. Separate and cut off broccoli flowerets from stem. Steam the broccoli or boil in water with a dash of salt. Broccoli should be a little soft inside. Remove immediately and drain. Either place the broccoli into a serving dish or wait to mix into the beef sauce mixture. Stir fry the beef until beef is cooked medium rare. Add in the sauce; stir and mix well for 30 sec. Add in the broccoli or pour the sauce mixture on top of the broccoli. For a little kick, add a sprinkle of crushed red pepper.
Cook Freezer Meal directions:
First thaw out the meat. Thaw broccoli half hour before cooking.(Depends on how frozen the broccoli looks.) Keep sauce mixture in freezer until ready to be mix in. Stir fry the beef until beef is cooked medium rare. Because broccoli was in the freezer, I recommend you stir in the broccoli with the beef. Once you think the broccoli is warm enough, add the sauce mixture. Ready to eat!
